- What better way to study how we eat--from choosing meals, to how much we eat, to who we dine with--than to study us while we eat at a real restaurant. The Netherlands's Restaurant of the Future does just that. The "Living Lab," run by Wageningen University, is outfitted with cameras and scales, and a back room where scientists study every aspect of what visitors do. Anyone can visit the restaurant, but all patrons must sign a research waiver before entering.
